FOCUS ON

The Spanish have their fair taste for unusual cuisine. Criadillas , the testicles of the pig or bull, are sliced and then cooked with garlic and parsley, or barbecued. The taste is intense and nicer if you don't know what you are eating! The Offal, or odd bits are enjoyed in Spanish cuisine. Have a look out for these items on your menu - " callos " (tripe), " mollejas " (sweetbreads), " sesos " (brains), " riñones " (kidneys) and " criadillas " (testicles).
